Curry is the quintessential dish of the Indian subcontinent. Madras Curry may be a spice blend typical of areas around Chennai, India (the city formerly referred to as Madras). Less heat than the recent curry, less sweetness than the mild. This blend is richer and deeper and a little smoky. It is used in sauces, marinades and to create intensely flavored oil. "Madras" style flavorer has some heat there too , so use it conservatively in your dishes. Besides adding to a standard curry, increase yogurt, marinades, sweet potatoes, stuffing and cheese sauces.
If you're in a pinch and only have a few ingredients on hand, stick to tried and true curry powder as a good garam masala replacement. Curry powder doesn't have an equivalent warming spices, but it does help to supply a pleasant amount of flavor depth to curry dishes.
